METHOD:
Melt the Butter in a saucepan, take off the heat and add the flour. Gradually add the milk until the desired thickness is reached. It needs to be fairly thick. The add the Cheese and Chestnuts, cook on the lowest light and stir occasionally.
Fry the Mushroom and Shallots in a little vegetable oil until gently cooked then add to the sauce.
Season with Salt and freshly ground black Pepper.
Use the Perfect Pastry to Line the dish pour in the mixture into the dish and allow to settle. Then using a teaspoon, dot small amounts of Cranberry sauce on top of the filling.
Roll out the PERFECT PASTRY and cover the pie.
Bake in a moderately hot oven for 35 mins untill the pastry is cooked.
